Description

The Sous Chef works directly under the Chef and has many important tasks to maintain the Farm to Fork food service of The Salvation Army Jackson’s Point Conference Centre. The incumbent is responsible for providing support to kitchen staff throughout food service. The Sous Chef assists with planning and execution of menus as well as specials of the day and regular options.

KEY RESPONSIBILITIES:

Food Services

  • Assist the Chef in monitoring kitchen activities, expediting orders to ensure quality taste or presentation and taking on additional responsibilities in the Chef’s absence to ensure that kitchen staff has proper direction.
  • Assist in the preparation and design of all food menus producing high quality plates both design and taste.
  • Ensure that the kitchen operates in a timely way that meets quality standards.
  • Preparing meals and food to meet the specifications of guests in a timely manner.
  • Properly measuring kitchen ingredients and food portions.
  • Ensure kitchen staff adhere to set standards, procedures, department rules and sanitation requirements.
  • Use kitchen knives and equipment such as grills, ovens, steamers and warmers in food preparation.
  • Assist with managing the kitchen inventory and ensuring supplies are fresh and of high quality.
  • Ensure proper food temperatures when cooking and proper storage afterward.
  • Keep the workstation and kitchen equipment clean, organized and sanitized.
  • Take charge of kitchen opening, closing as directed by the Chef.
  • Assist with menu planning and preparation of food items, which includes specialty or seasonal offerings.
  • Assist with the coordination of the workflow and schedules of other kitchen staff members.

Health and Safety

  • Ensure food handler requirements are adhered to at all times by anyone working in or entering the kitchen.
  • Ensure that Department of Health and Fire regulations are adhered to in the kitchen and food storage areas and other areas of the building.
  • Check/record refrigerator and freezer temperatures; maintain cleanliness of all equipment, drawers, and cupboards and clean food preparation areas, cooking surfaces, and utensils.
  • Follow guidelines for the safety and security of food and equipment and monitor practices to ensure adherence.
  • Monitor and maintain kitchen equipment, report any equipment issues to supervisor.
  • Maintain sanitation, hygiene, health and safety standards and safe handling of foods while performing duties.
  • Report to the supervisor new equipment that is required or broken equipment, which needs to be repaired or replaced.
  • Work in compliance with OH&S Act and Regulations and abide by The Salvation Army’s health and safety policies and procedures.

Perform other related duties as required.

Working Conditions:

  • This is a permanent full-time position based on 40 hours weekly.
  • Ability to lift/move on a regular basis up to 35 pounds (15.8757 kgs.)
  • This job requires walking, carrying, sitting, reaching, bending, twisting, climbing, stooping, kneeling, and crouching frequently and working in a standing position for long periods of time.

Normal hours of work – hours and work schedule will vary as operational requirements and follows a work rotation schedule and will include days, afternoons, evenings, and weekends.

QUALIFICATIONS AND EDUCATION REQUIREMENTS:

  • Completed Secondary School, plus specialized courses of up to six (6) months in culinary arts.
  • Certified Chef de Cuisine (CCC) preferred.
  • Current, valid Safe Food Handler’s Certification is required.

EXPERIENCE AND KNOWLEDGE:

  • Minimum of three (3) years of formal prior related culinary experience in a busy restaurant or hotel kitchen using kitchen equipment and a thorough understanding of various cooking methods, food preparation techniques and sanitation procedures.
  • Exceptional cooking experience and skills.
  • Knowledge of health and safety standards.

Alternative combinations of education and experience may be considered.

  • Ability and willingness to undergo applicable screening and background checks successfully that are satisfactory to The Salvation Army, in its sole discretion (i.e., The Salvation Army Abuse Registry) and provide an original copy of a Background Check screening.
  • Ability and willingness to develop an understanding and support for the mission and purpose of The Salvation Army in Canada and its implications as related to position responsibilities.
