Description

The Lead Cook leads in the preparation and service of nutritious meals as outlined on menus and schedules in accordance with applicable food service and safety standards and regulations.

• Permanent Full Time
• Monday to Friday, flexible time blocks as may be needed
• This position requires union membership

Responsibilities

• Under the direction of the Food Services Manager, plans and prepares meals for ARC clients including but not limited to special dietary needs of the residents.
• Cooks a variety of meals from scratch using standard recipes and recognized culinary techniques.
• Transports and serves meals as required.
• Orders food supplies; monitors food costs and controls.
• Ensures meals are served on time and a consistent overall quality standard and presentation of food is maintained.
• Completes required HACCP logs.
• Restocks work areas.
• Participates in menu revisions and/or adjust menu plans according to food supply.
• In the absence of the Food Services Manager, makes decisions on menu changes, food service delivery and/or staffing and volunteer schedules in consultation with the Executive Director.
• Assists with receiving and storage of products using FIFO method.
• Participates and/or leads daily stand up meetings with the Food Services Team.
• Keeps work stations clean and sanitized at all times and leads in the general cleaning and maintenance of the kitchen, dining and food storage work areas and equipment.
• Prepares meals and platters for catering requests and other special events.
• Prepares bag lunch service for offsite programs.
• Adapts work practices with specific parameters to ensure the efficient delivery of food series.
• Follows guidelines for the safety and security of food and equipment and monitors practices to ensure adherence.
• Performs other duties as assigned

Qualifications

• The successful job applicant will have completed High School, plus specialized courses of up to three (3) years ie. Culinary Arts Program or Journeyman/Red Seal Certification (An alternative level of education and experience may be acceptable).
• Valid Food Safe Level 1 and Advanced Food Safe Certificates.
• Current WHMIS training.
• Current Occupational First Aid Level 1 training.
• Five years of prior related experience, with at least one year of institutional cooking experience.
• Familiarity with all professional kitchen equipment.
• Understanding of food safety practices.
• Experience with culinary terminology and techniques.
• Excellent time-management skills.
• Ability to remain calm and focused in a fast-paced environment.
• Team spirit, with a resident-focused attitude.
• Demonstrated ability to work in a positive manner and communicate effectively.
• Ability to lift more than 20 pounds.
